Avocado is one of the most nutritious fruits worldwide. Besides being a great source of dietary fiber, protein, potassium and other essential minerals and vitamins, avocado is totally cholesterol and sodium free. In addition, due to its extremely high concentration of monosaturated fat (about 75%), avocado greatly boosts HDL ("good") cholesterol, which provides protection against heart disease and stroke. Now, although the type of fat in avocado is considered "healthy fat", moderation is still key as just 1/2 an avocado contains about 145 calories (so go easy on the guacamole). You can reap the full nutritional benefits of avocado by adding it to just about any food preparation including soups, salads, sandwiches, and sushi. I add 1/2 an avocado to my salads on most days of the week and it is my number one request in any sushi preparation. How do you like your avocado?

I tried avocado for the first time this summer in a salad. It wasn't too bad. I have been reading about the health benefits of it and will try to add it to my menu more often.
