WEDNESDAY'S SOUP: WARM MELLOW CARROT AND CELERY SOUP (1278 hits)


Winter's chill is all around you and there's one way to warm up the tummy and also help you eat a hearty meal for better health. This simple recipe it easy to make and tasty for carrot and celery lovers. . .

Ingredients:

Carrots

Celery

Vegetable broth

Tarragon

Onion

Chardonnay [optional]

Salt and pepper

Virgin olive oil


In a soup pot bring to boil 5 cups of water, sliced or whole carrots, diced celery, diced onion and 2 cups of vegetable broth. Add seasons of salt and pepper and tarragon to taste. Add in 1/2 cup of chardonnay, mix in 2 tablespoons of virgin olive oil. Simmer on low heat until carrots are tender, add more water if necessary
Serve hot and steamy.
