Recipe: Buffalo Chicken Salad Inspired by a Guilty Pleasure (789 hits)

ast spring, I took on a thirty day challenge to replace my favorite guilty pleasures for a salad inspired by it everyday for thirty days. The salad swap encourages you to trade one meal for a salad that has the same flavors you crave with less calories. As the weather gets warmer, many people are trying to get their “summer time fine” on so salads are a great way to do that because most times they are very filling with way less calories than what you would normally eat. Even if you are just trying to lead a more healthier lifestyle in general, this is a great challenge and you can still enjoy the flavors you love without the added calories.

Buffalo Wings and Fries are probably my most favorite guilty pleasure, and I’m not talking about baked wings and oven baked fries! Fried, crispy goodness is what I’m talking about, but that’s not something I can eat everyday. This salad however, gives me the same taste I love, and I can eat it as often as I want. If you like hot wings, you’ll love this salad.

Buffalo Chicken Salad (Makes 2 Salads)

Ingredients:

You will need:
1 Boneless, skinless chicken breast, fully cooked and cut into strips or shredded
1 Bag Mixed Greens Salad
Handful of cherry tomatoes, halved
1/4c. Your favorite Hot Wing Sauce
2Tbsp. Lite Blue Cheese Dressing
Black Pepper to taste
1/4tsp. Celery Salt

1. Assemble salad and tomatoes one plates.

2. In a separate bowl, toss cooked chicken in hot wing sauce. Add in some lite dressing if it’s too spicy.

3. Season greens with black pepper, One or two shakes will do it.

4. Top salad with buffalo chicken, and drizzle with dressing.

5. Shake a little celery salt on top. Enjoy!
