This soup recipe has many variations. I came across this one a few years ago when an acquaintance of mine made it who was on a very low budget but had a few mouths to feed. She made it taste just right!
Ingredients:
1 pound of ground beef
2 medium ice potatoes
carrots
2 to 3 broccoli sticks
parsley
1 small onion
1 small bell pepper
salt/pepper
basil
1 can of tomatoes/ or 1 whole fresh tomato
1 can of tomato sauce
Prepare ground beef by browning in skillet and draining.
Peel ice potatoes, and chop up potatoes, broccoli and also carrots into bit size fine chunks, if you are using a fresh tomato also cut and slice in bite size chunks.
Chop finely about 1/4 of bell pepper and 1/2 of your small onion.
In a boiling soup pot with 4 to 5 cups of water; add all the ingredients including vegetables and slowly bring to a simmer. Add in can tomatoes and or your fresh tomato chunks
Add can of tomato sauce as you lower temperature to simmering.
Stir in your seasonings, i.e. Salt, pepper, basil, oregano and you can add a little season salt for taste. You can use other spices like a dash of paprika and a soul seasoning if desired. Test vegetables for tenderness and serve.
Serve with garlic bread, cornbread, or warm rolls and or with a salad or sandwich.
Experiment a bit and see which ingredients you want to include or omit for you own taste! If you add chili beans it may taste more like chili than ground beef soup. :)
