Just made a homemade minestrone that has a zesty taste. If you like get your vegetables and you enjoy the taste of cabbage this soup is really nice. Only take a little time to make and the delicious taste might have you wanting more. I'm just making it work so here's what I did.
INGREDIENTS:
White Cabbage
Potatoes
Carrots
Peas
Onion
Red and Green Peppers
Green beans
1 can of tomato sauce [small]
1 Can of whole tomatoes
Basil, parsley flakes, and oregano spices
Salt and Pepper
Canola Oil
Pre cook spaghetti in boiling pot and drain but leave in a little water.
While your spaghetti is waiting in a separate pot for soup, add all your vegetables including the cabbage and diced up peppers. You can use all your cabbage, or if you prefer-- just the white part if the cabbage is fine; take off the green and slice up then add with other vegetables. Note: [Yes you can use fresh, frozen or can veggies!]
Use about 1 tablespoon of canola oil and add in 1 can of tomato sauce
After vegetables become tender add your spaghetti and the rest of your spices. Cook slowing at a simmer about 20 to 30 minutes adding additional water if required.
Serve this great soup with almost any kind of salads or just make cheese toast!
The experience was good tasting!
This soup can be served over several days if kept refrigerated.
