One of these days Jen, I'll try cooking some real dishes like this. One of the problems is I don't have a dishwasher, so I try to keep down the number of pot, pans, etc. The next place I move to a dishwasher is a definite requirement.

Oh, and the rice, lots of carbs. It takes some experience to find the right dose of insulin for a meal like this. And I'd probably go heavy on the meat compared to the rice.

Yes, I know what you mean Steve. However, with moderation, portioning, and substituting one starch or carb for another... Say you pick brown rice instead of white rice and you substitute the fried plantain for baked instead of fried. You use honey instead of brown sugar and so on and so forth...
